Nubian (often Anglo-Nubian in UK usage as a related type) dairy goats are known for high butterfat milk with a rich, sweet flavour and distinctive long pendulous ears and Roman nose. Milk solids make excellent ice cream, caramel sauces, and full-bodied cheeses. Choose Nubian milk when you want goat dairy that feels luxurious rather than thin. Some drinkers find the flavour stronger than Saanen; good cooling and diet management keep it clean. Yield is lower than Saanen but quality is outstanding for artisan products.
