Normande cattle from Normandy are dual-purpose animals famous for milk that feeds Camembert, Pont-l’Évêque, and Isigny-style butter. Milk solids and fat are high for a large dual-purpose breed; flavour is rich and buttery with strong cheese performance. Cheesemakers prize Normande milk for soft bloomy-rind and washed-rind cheeses. Butter and cream are excellent. Drinking milk tastes fuller than Holstein. Outside France, specialty herds supply restaurants seeking Norman dairy character.
