Nili-Ravi

Nili-Ravi buffaloes of Punjab (Pakistan and India) are large, usually black with distinctive white markings on face and legs, and rank with Murrah as the subcontinent’s greatest milch buffaloes. Milk is extremely rich—high fat, high protein—and forms the backbone of Punjabi sweets, butter, and commercial buffalo dairying. Flavour is full and creamy, less “cowlike” than Holstein milk and ideal for rabri, kheer, and stretched-curd experiments. Nili-Ravi bulls are prized for upgrading village buffaloes. Handle the milk’s fat carefully in espresso drinks; it can overwhelm if not balanced.
