Montbéliarde is the red-pied dairy cow of Franche-Comté, central to Comté and other mountain cooked-curd cheeses. Milk protein and casein quality support elastic, long-aged wheels; flavour is full with alpine pasture notes when cows graze Jura grasslands. In the vat Montbéliarde milk gives excellent yield and texture for Gruyère-family cheeses. Yoghurt and drinking milk are robust rather than delicate. Look for mountain-season milk when seeking the classic fruity-nutty Comté dairy signature.
