Dairy yield is moderate; milk is mild to slightly sweet and traditional in regional diets rather than specialised high-production dairying. Kankrej milk appears in village dairy and some indigenous herds. Use for everyday Indian dairy cookery—curd, buttermilk, sweets—when breed-specific milk is offered. Not a volume export dairy type.
