Guernsey, the other classic Channel Island dairy breed, yields golden milk high in beta-carotene and butterfat—historically marketed as Golden Guernsey liquid milk. Flavour is rich and slightly sweet, with excellent cream for butter and soft cheese. The breed is less numerous than Jersey today but remains prized where colour and flavour of milk matter. Use Guernsey milk where you want natural colour in butter, clotted-style cream products, and full-flavoured drinking milk. It performs beautifully in baked custards and ice cream bases. Herds are often smaller and pasture-based, so seasonality can show in the glass.
