Gir (Gyr) cattle from Gujarat are among India’s most important dairy zebu, parent to many Brazilian dairy indicus lines. Milk is relatively rich and sweet for tropical cattle, culturally central to ghee, dahi, sweets, and temple dairy traditions. Long pendulous ears and a pronounced hump mark the breed. Gir milk is prized in desi dairy products and increasingly in A2 and indigenous-breed marketing. It makes excellent curd and heat-stable cooking milk for Indian cuisine. Brazilian Girolando systems use Gir blood for tropical dairy expansion.
