Donkey milk is a rare equine dairy with very low fat, high lactose, and a composition closer to human milk than cow’s milk in some nutritional comparisons. Flavour is sweet and delicate; supply is tiny because jennies give little milk and must nurse foals. Specialty European farms (Italy, Balkans, France) bottle or freeze-dry donkey milk for drinking and cosmetics. Culinary use is mostly as a precious drinking milk or in delicate sweets—not for hard cheese. Expect high prices and short fresh shelf life.
