Danish Red is a traditional Danish dairy breed once central to national milk production before Holstein expansion. Milk carries good butterfat and a full, clean flavour suited to butter, cheese, and drinking milk in Denmark’s cooperative system. Though numbers are smaller today, Danish Red milk still appears in heritage and mixed herds. It makes fine table butter and semi-hard cheese. Expect a richer everyday milk than pure Holstein without Channel Island intensity.
