Chios sheep from the Greek island of the same name are spotted dairy animals producing rich milk for feta, yoghurt, and local whey cheeses. Fat and protein levels support bright acid set and brined styles; flavour is clean-to-herbaceous depending on island and mainland grazing. The breed also carries a reputation for prolific lambing that supports farm income beside milk. Greek dairies use Chios milk in PDO and non-PDO feta blends and thick strained yoghurts. Home cooks boil it for rice puddings and bake it into savoury pies. Outside Greece the breed appears in improvement programmes wanting Mediterranean dairy genetics with maternal strength and commercial parlour potential.
