Brown Swiss (Braunvieh origin) is an alpine dairy breed whose milk is noted for relatively high protein and casein quality—cheesemakers favour it for firm curd and good yield. Flavour is full and slightly nutty compared with pale Holstein milk. The breed thrives in mountain and mixed systems as well as intensive dairies. Use Brown Swiss milk for alpine-style cheeses, yoghurt with good body, and drinking milk with more presence than commodity cartons. Protein strength helps mozzarella and hard-cheese texture. It is less about yellow cream drama and more about structural dairy performance.
