Boran cattle are East African zebu renowned for beef and pastoral hardiness in Kenya, Ethiopia, and neighbouring rangelands. Milk is important to pastoral diets but secondary to overall herd economy; yields are modest, flavour mild and seasonal with forage. Boran milk is drunk fresh or fermented in pastoral households more than sold as branded dairy. When available commercially it is a regional product. Use in East African tea and sour milk dishes rather than European cheese vats.
