Ayrshire is a red-and-white Scottish dairy breed valued for efficiency on grass, udder quality, and milk with balanced fat and protein rather than Holstein extremes. Milk flavour is clean and slightly sweet—excellent all-purpose liquid milk and cheese milk without the heavy richness of Jersey. In Scottish and northern dairying, Ayrshire milk feeds both bottle trade and cheddar-style vats. It foams and steams well for café milk and makes straightforward yoghurt. Choose it when you want characterful pasture milk without overpowering creaminess.
