Ankole-Watusi cattle of the Great Lakes region are spectacular longhorn Sanga-type animals kept for status, bridewealth, and some milk. Dairy yield is low relative to specialised breeds; milk is mild and culturally significant in Ugandan, Rwandan, and Burundian traditions. Ankole milk appears in local fresh and fermented forms. It is not an industrial supply. Culinary use follows regional practice—tea, sauces, and sour milks—celebrating heritage more than high butterfat performance.
