Angler (Angeln cattle) from the Angeln peninsula of Schleswig-Holstein is an old German red dairy breed noted historically for high butterfat. Milk is rich and traditional, suited to butter-making and full-flavoured drinking milk rather than extreme modern Holstein volume. Angler milk is rare outside northern Germany and conservation herds. When available it makes excellent butter and farmhouse cheese. Expect deeper flavour and higher fat than commodity cartons.
