Abondance is a pie-rouge alpine dairy breed from Haute-Savoie, named for the Abondance valley and central to cheeses such as Abondance, Reblochon (with other breeds), and tomme styles. Milk is well suited to mountain cheese technology, with good solids and a fruity, alpine character on summer pasture. Use Abondance milk for washed-rind and pressed alpine cheeses, or drink it as rich seasonal farm milk. It is a quality cheese milk more than a volume breed. Outside Savoie, pure Abondance milk is uncommon but prized by specialist affineurs’ suppliers.
