Coryphaena hippurus is mahi-mahi or dolphinfish—the brilliantly coloured open-ocean fish with firm, moist, mildly sweet flesh that is lean-to-moderate in oil. Meat is pinkish translucent raw and turns white-beige when cooked with large moist flakes. Fast growth makes the species relatively resilient compared with many large pelagics. Grill thick fillets, blacken, or broil with tropical fruit salsas. Mahi dries if overcooked—pull early. The skin is thick; most cooks remove it before service. Bleed and ice immediately for the sweetest flavour.
