Piper retrofractum is Javanese long pepper—thicker, hotter spikes than many P. longum lots, with a smoky-sweet heat used in Indonesian cookery. Distinct species from Indian long pepper though both are “long pepper” in English. Grind for sambals and rich meat dishes. Spikes are often denser and more ferocious—dose carefully.
