Persian Lime
A tier
Persian (Tahiti) limes are the large, usually seedless supermarket limes—cooler green juice, milder perfume than Key limes, thicker rind, year-round global supply. They are triploid hybrids, not pure aurantiifolia. Default lime for most bartenders and line cooks by availability. Wedges for beer and tacos; juice for margaritas and dressings. Reliable acid with less floral lift than Key. Store briefly; juice fades after cutting.
