Meat
Welsh Mountain
B tier
Welsh Mountain sheep are small, thrifty hill animals in several colour and type variants across Wales, from white-faced upland ewes to darker variants. They excel on steep acidic pastures and form the base of many Welsh lamb supply chains protected under PGI branding. The meat is fine-grained with a sweet, clean hill taste and relatively light fat cover—ideal for small legs, racks for two, and traditional cawl. Slow growth on mountain grazing concentrates flavour; terminal sires are widely used when heavier export carcasses are required.
