Meat
Centre
Centre lamb tongue is the meaty middle after simmering and peeling—fine slices for sandwiches, tacos, and cold platters. Milder and smaller than beef tongue, still satisfyingly dense. Cook whole first, peel warm, then portion the centre for neat carving. Sear slices for contrast or serve cold with mustard. Use the cooking broth as soup base. Undercooking leaves a rubbery bite—be patient.
