Pelibüey is a tropical hair sheep widespread in the Caribbean, Mexico, and parts of Central and South America, typically cinnamon to white in colour, polled, and highly adapted to heat and rough forage. It underpins much of the region’s smallholder lamb and mutton supply. Meat is lean and takes citrus, chili, and slow-cook seasonings of Caribbean and Mexican kitchens exceptionally well. Carcasses are light-to-medium; whole-animal roasting for celebrations is common. Flavour is approachable when young and more assertive as animals mature toward mutton.
