Manchega sheep of La Mancha are Spain’s great dairy breed for Manchego cheese, with white and black varieties adapted to dry plateau grazing. Surplus lambs and specially raised suckling animals supply a parallel meat market tightly linked to regional identity. Manchega lamb—especially young cordero manchego—is tender and clean-tasting, roasted whole or as quarters in Castilian style. Dairy genetics mean excellent early growth on ewe’s milk; flavour stays refined when animals are young, becoming more pastoral if finished longer on stubble and scrub.
