Bone In
Bone-in loin (saddle split into bone-in roasts or racks of chops) keeps vertebrae or T-bone structure for flavour and presentation. Juices stay closer to the meat during roasting than fully denuded cannons. Roast or grill to pink; rest before carving into chops or slices. Protect thin ends with foil if needed. Bone-in is forgiving and photogenic. Ideal when you want chop service without pre-slicing raw.
