Jacob sheep are piebald, often polycerate (multiple-horned) heritage animals associated with British parkland and earlier Mediterranean and Middle Eastern spotted types. Small flocks today are kept for conservation, wool craft, and distinctive appearance rather than industrial meat volume. Jacob lamb is light, lean, and delicately gamey—excellent for small farm roasts and nose-to-tail cooking of whole young animals. Because purebreds finish lightly, many conservation graziers sell limited seasonal lambs; the meat rewards gentle roasting and herbal marinades rather than high-heat overcooking.
