Blackhead Persian

Blackhead Persian is a fat-rumped hair sheep of southern Africa with a white body and distinctive black head, developed from Somali-type fat-rumped stock for arid meat production. It contributed half the foundation of the Dorper and remains important in its own right on hot rangelands. Meat is lean in the muscle with energy stored in the rump fat pad—traditional cooks render rump fat for frying and flavour. Lamb flavour is moderate and well suited to braais, stews, and spiced dishes; the breed thrives where wool sheep fail from heat and parasites.
