Assaf is an Israeli-developed dairy sheep composite of Awassi and East Friesian, combining fat-tail hardiness with high milk yield for intensive Mediterranean dairy systems. Large commercial flocks produce milk for cheese while surplus lambs enter meat channels. Assaf lambs grow rapidly on high milk intake, yielding mild, pale meat suitable for everyday Middle Eastern grills and roasts. Pure dairy conformation is less blocky than terminal breeds; many units cross a meat sire for market lambs while retaining Assaf dams for the milking parlour.
