Greater kudu (Tragelaphus strepsiceros) are large, spiral-horned African antelope whose meat is among the most prized of southern African game—fine-grained, mild, and tender when young. Bulls are huge; cows and young animals eat best. Loins and fillets grill like premium venison; shoulders braise beautifully. Flavour is clean with light game sweetness, less aggressive than some wild bovids. Ranch and legal hunt supply dominate commercial channels.
