Light red kidney beans are pinker-red large kidneys preferred in some regional chilies and West Indian cooking—slightly softer colour in the bowl, same meaty class behaviour. They photograph lighter than dark reds. Use interchangeably with dark red in most recipes when colour is flexible. Excellent in rice-and-peas variants. Full cook still required.
