Red kangaroos (Osphranter rufus) are Australia’s largest macropods and a major species in the commercial kangaroo harvest for meat and skins. Lean, high-protein meat from young animals is deep red with a mild game flavour. Fillets and loins should be seared rare to medium-rare; overcooking turns them dry and liverish. Strong in stir-fries, steaks, and premium mince. Harvest is regulated by state quotas for ecological management.
