Curls trap dressing and crisp into chips; mature leaves need rib removal and longer cooking than baby curly. Frost sweetens the brassica bite. Chips, soups, and sautéed sides dominate use. Massage with oil and acid for raw salads. Avoid yellowed bags—curly kale turns sulphurous when old.
