Lang is a pear-shaped jujube excellent for drying—fruit wrinkles into classic red dates with concentrated honeyed sweetness and a manageable pit. Fresh texture is crisp but the cultivar’s fame is as a drier and processor more than the largest fresh snack. Trees are productive and widely adapted in warm temperate zones. Dry fully for snacks, winter soups, and tea blends; eat fresh when mahogany if you prefer less sugar density. Lang dried fruit is a pantry staple in Chinese-inspired kitchens abroad.
