Chondrus crispus is Irish moss/carrageen—fan-branched red alga that releases carrageenan gel when simmered, used for puddings, thickening, and traditional drinks. Atlantic species of Ireland, Maritime Canada, and beyond. Simmer and strain for blancmange-style gels; use in vegan thickeners. Species is the classic carrageen. Mineral sea taste under sweetness in desserts.
