Pink Hyssop

Pink hyssop is H. officinalis selected for pink flower spikes—same camphor-mint leaf as blue forms, different garden colour. Bees still work the flowers; cooks still dose leaves cautiously. Pink types brighten herbaceous borders without changing the underlying culinary chemistry of true hyssop. Use leaves exactly as blue hyssop in small seasoning amounts; cut flowering stems for dried arrangements that retain a faint herbal scent. Colour is the horticultural selling point, not a milder spice. Avoid confusing with pink Agastache sold as “hyssop” in some nurseries.
