Hydnum repandum is the classic wood hedgehog—creamy to pale orange caps with spines instead of gills, dense sweet flesh, and almost no worm damage compared with many wild mushrooms. Flavour is mild nutty-sweet; texture stays meaty when sautéed or roasted. Trim dirty stem bases; spines may shed in the pan—perfectly edible. Excellent beginner edible where ID is confident. Avoid waterlogging; dry-sauté first.
