Bactris gasipaes, the peach palm, is the main sustainable source of canned and fresh heart of palm—clumping palms that resprout after harvest, unlike single-stem wild palms killed when cut. The ivory cylinder of tender inner stem is mild, slightly sweet, and artichoke-like. Texture is firm-tender when packed well. Slice into salads, ceviche-style marinades, or grill as vegetarian “scallops.” Species identity underpins most responsible commercial hearts. Drain and rinse canned product to adjust salt.
