Helmeted Guinea Fowl

Helmeted guinea fowl is the common name for the familiar farm and wild African bird with a bony casque and pearled plumage in many colours. Meat is lean, slightly gamey, and excellent roasted whole for two or jointed for grill. Brine or bard; serve with sharp sauces that cut richness you will not get from fat alone. A favourite when chicken feels too plain and pheasant too wild.
