Preferred for many commercial nectars because pigment sells the glass. Blend and strain for pink juice; eat soft ripe fresh. Match sugar to acidity—pink is not automatically sweeter than white. Ship green-mature and ripen carefully to avoid flat flavour. Paste and ice cream love the colour.
