Sage grouse meat carries the perfume of Artemisia country—dark, lean, and polarising for diners unused to sagebrush-fed game. Successful dishes lean into the flavour with bacon, onions, and slow moisture rather than fighting it with delicate cream alone. Hunt legality and ethics come first; culinary use is secondary and scarce. When you have a young bird, quick breast sear plus braised legs can work. Not a beginner game bird.
