Ruffed grouse is the premier woodland game bird of the northern US and Canada, with tender, lightly gamey meat that thrives in cast-iron pans and simple butter baste. Partridge to many Northern hunters in name only, it is true grouse on the plate. Cook medium; rest; serve with wild rice, cranberries, or apple. Breast can dry if treated like chicken—use a thermometer and confidence. Legs are small but delicious confited.
