Hazel grouse is a small, secretive forest bird of Eurasian mixed woods, with delicate pale-dark meat finer than capercaillie and milder than black grouse. It is a Central and Northern European delicacy when hunters or specialty dealers can supply it. Cook like a small pheasant or large quail—butter, quick roast, light game jus. Overcooking destroys its subtlety. Portions are modest; plan two birds for a main if size is typical.
