Capercaillie is the giant forest grouse of pinewoods, yielding steaks of dark meat with a flavour some liken to a cross between grouse and mild liver when diet is resin-heavy. Young hens are preferred for roasting; mature cocks often go into complex braises. Balance intensity with cream, juniper, apple, and bread dumplings in Central European style. Availability is scarce and seasonal—treat each bird as a special-occasion centrepiece.
