Expect darkish firm flesh with good oil, excellent when smoked or salted in some traditions, and superb roe. Flavour is assertive marine, not bland whitefish. Cook with strong herbs, tomato, or Asian aromatics. Remove the dark belly lining if bitter. A fish for people who like character, not neutral flakes.
