Sultana is the pale seedless grape closely tied to Thompson Seedless/Sultanina lines, named in trade for both fresh green berries and the light raisins they become. Flavour is mild honey-sweet; berry size is medium-small with thin skin. In many languages sultana means the raisin more than the fresh fruit. Use fresh for snacking and fruit salads; dried sultanas enrich bakes, pilafs, tagines, and cheese boards. Soak dried fruit before folding into batters. Culinary versatility of the raisin form often outranks the fresh grape’s mildness.
