Steinbacher is a fighting-origin German goose from Thuringia that doubles as a flavourful utility bird—alert, muscular, and less fat-laden than pure foie-type heavies. Meat is firm and savoury, rewarding careful roasting and excellent in braised portions. Treat like a slightly athletic roasting goose: baste, do not overcook breast, and give legs enough time. Pair with Thuringian or central German flavours—onion sauce, dumplings, braised red cabbage. Availability is limited outside specialty breeders.
