Roman is a small-to-medium white Italian goose traditionally kept for meat, eggs, and weed control, with a compact carcass ideal for smaller festive tables. Meat is rich but the bird cooks faster than giant Embden or Toulouse, reducing the risk of dried breast while waiting for legs. Roast with rosemary, garlic, and citrus; Italian sides of lentils or braised greens balance the fat. Tufted Roman variants exist for show—the culinary bird is the utility white type. Excellent “goose for four” when large breeds are too much.
