Embden (Emden) is a large pure-white German goose prized for a heavy roasting carcass, abundant fat, and relatively mild, fine flesh among meat geese. It became a global standard white table goose for Christmas and Martinmas feasts. Prick the skin, start rendering early, and pour off fat for the best roast potatoes of the year. Breast slices are rich; legs need thorough cooking. Embden is the classic “white goose” of butchers’ windows when breed is named at all.
