American Buff is a soft apricot-buff coloured utility goose selected in North America for medium-to-large meat birds with calm temperaments. Flavour is classic domestic goose—rich dark meat, good fat, festive aroma—without the extreme bulk of some European heavies. Roast for Thanksgiving alternatives or European-style winter feasts; the buff pinfeathers can leave slight colour on skin but do not affect taste. Pair with sweet potato, cranberry, or pecan stuffing for an American table.
