African Goose
B tier
African goose is a heavy knobbed breed related to Chinese/swan-goose lines despite the name, with a dewlap and substantial body for meat. Flesh is rich yet often slightly leaner than Toulouse, with bold flavour suited to spice rubs, smoking, and long roasts. Render fat carefully—still present, just not always Embden-level—and pair with southern or North African spice profiles if you want to play on the name, or keep classic European gravy. A solid dual-looking utility meat goose for specialty farms.
