Essential for Thai, Lao, and Indonesian flavour bases. Peel if skin is tough; young tips can be used more completely. Greater galangal powder exists but loses top notes—prefer fresh or frozen. Store rhizomes wrapped in the fridge like ginger, slightly drier.
